Sautéed spicy spinach and button mushrooms

Ingredients:

1 handful of washed spinach

3 peeled and sliced button mushrooms

1 pinch of curry powder, black pepper, celery salt, coriander 🍃 leaves

1/2 pinch of paprika & salt

1 pod crushed garlic

Diced fresh herbs parsley, chives, and 2 thyme stalks, scotch bonnet pepper.

1 tbsp of olive oil (ideally; in this case, it’s vegetable oil.)

A “toops” of water (a few tsps)

Set stove to medium heat. In a non-stick pan or skillet, add oil. When it’s hot, add half of diced fresh herbs and crushed garlic until the aroma fills the kitchen. Yum. Add spinach (slice if you like), mushrooms, pinches of the powdered spices (curry, black pepper, salt etc.), and the “toops” of water. Stir with a slotted spoon for 2 minutes. Top off with remaining fresh herbs and let sit for a minute. Remove from heat, and set on a white plate to see that rich green pop.

Spinach makes another appearance in this dish (with broccoli and pak choi) alongside mixed corn and rice.
